What You'll Need:
- 1 cup cooked quinoa
- 1 1/2 cups low sodium chicken broth (or vegetable broth)
- 1/4 small onion, chopped
- 2 carrots, chopped and peeled
- 3-4 garlic cloves, minced
- 1/2 tsp ground ginger
- 1 tbsp olive oil
- 2 eggs
- 1/2 cup frozen peas
- 1 1/2 tbsp teriyaki sauce
- 2 1/2 tbsp soy sauce
- 3/4 tsp sesame oil
What You'll Do:
- Cook quinoa according to package instructions. After cooking, fluff with fork, and store in fridge (up to overnight).
- Mix teriyaki sauce, soy sauce, and sesame oil in a small bowl; set aside.
- Heat 1/2 tbsp olive oil in a large pan over high heat. Add onion and carrot. Cook about 7 minutes, or until onion and carrot are softened.
- Add garlic and ginger. Cook another 2 minutes.
- Add in the rest of the olive oil and quinoa. Stir fry about 2 minutes.
- Add sauce and stir-fry until mixed well, about 2 minutes.
- In a separate pan, scramble your two eggs. Add to the stir-fry.
- Toss in the peas until warmed through.
- Serve alone, or as a side to your favorite asian main dish!
